Warming up with National Soup Month! #HormelFamily

Monday, January 14, 2013

January marks National Soup Month, and with temperatures still dropping, it‟s no wonder that people turn to a hot bowl of soup to warm them up! Today's high is a balmy SEVEN degrees. Yikes!

It's no secret that I'm no whiz in the kitchen...The easier, the better. Part of that has to do with time, or lack there of, and the other part of it has to do with me being just plain scared to try new recipes. (It doesn't help that I'm a pretty picky eater...)

A couple of years ago, my Mother-In-Law gave me an amazing giant stock pot for Christmas, along with some recipe books that are filled with all sorts of different soup recipes.  I also scour the interwebs for various (easy!) soup recipes.

One of our favorites...

Chicken Taco Tortilla Soup!

4 CHI-CHI'S® 6 inch Fajita Tortilla, cut into thin strips
3 cups water
1 (16-ounce) jar CHI-CHI'S® Thick & Chunky Salsa Mild
3 Herb-Ox® Chicken Bouillon Cubes
1 (1.25-ounce) package CHI-CHI'S® Taco Seasoning Mix
2 (10-ounce) cans Hormel® Chunk Breast of Chicken, drained and flaked
1 (15-ounce) can black beans, drained and rinsed
1 (11-ounce) can whole kernel corn with red and green bell peppers, drained

Sad, but true - one of my main criteria for any recipe...is the # of ingredients.  This one, scores a 'GO FOR IT' in my book!

And then...with just four simple steps...viola! Dinner for your family!

1. Heat oven to 400°F.
2. Place tortilla strips on baking sheet; lightly coat strips with cooking spray. Bake 5 to 6 minutes or until crisp.
3.Meanwhile, in large saucepan, stir together water, salsa, bouillon and taco seasoning over medum-high heat. Bring to a boil. Reduce heat to medium-low. Cook 5 minutes.
4. Add chicken, beans and corn to saucepan. Cook 10 to 12 minutes or until soup is hot and flavors are blended. Ladle into warm bowls; top with tortilla crisps. Garnish with sour cream, if desired.

Another fail proof favorite soup recipe we've found is the Chicken Noodle & Vegetable Soup ~
There's just something about warm chicken noodle soup on a cold, blustery day...

Do you have a favorite go to soup recipe? What soup does your family request the most during the winter?
